Lion King in the Jungle Cake

I made this jungle-themed cake for my daughter after she saw and loved The Lion King.

I just used a Duncan Hines white cake mix and layered it with strawberry ice cream. After icing it with white frosting, I left it in the freezer overnight to harden. While it was hardening, I made the volcanoes / mountains by rolling and taping cardboard pieces into cones. I used these cones as molds by filling them with meltable chocolate (can be found at any grocery store). I put those in the refrigerator to harden overnight as well.

In the morning, I put the chocolate “volcanoes / mountains” on the cake and started icing. I used the same icing as for the rest of the cake, but this time, I added different food colorings to it. After adding the green icing to the top of the cake and to cover all of the “volcanoes / mountains,” I added the other colors. For the thiner lines (like the blue river and red magma) I used a make-shift pastry bag by filling a sandwich bag with icing and cut the very tip of the bottom of the bag off.

The trick is to only keep the cake out of the freezer an hour at a time. If it takes you more than an hour, return the cake to the freezer for an hour so that it doesn’t melt. Before serving, I added some Lion King toys to the top of the cake as well.
