It’s a Jungle Out There! Jungle Cake

I followed the boxed directions to make a 14″ round cake, double layer and one cake in the Wilton Horseshoe Cake Pan.

To assemble the jungle cake, make one batch of buttercream icing* thinned with 1 tablespoon corn syrup. Spread a thin layer of butter cream icing over 14″ round and place in freezer until icing is hardened (about 30 minutes). Remove cake from freezer and add a thicker layer of light brown icing over hardened white butter cream layer.

Place Horseshoe cake on 14″ round, placing all the way to back of the round. Add a think layer of butter cream icing to horseshoe shaped cake, place in freezer until firm. Remove and cover with light brown icing.

Elephants:
Mix 1/4 cup grey icing.

Using a Wilton tip 2A pipe four small 1/2″ tall circles (these will be the elephant’s legs). Place a lollipop stick or toothpick into each circle for support, leaving about 1″ of the stick poking out.

Now, using Wilton Tip 1A pipe a 1.5″-2″ cirlce (this is the elephant’s body) on top of the four small circles and on top of the lollipop sticks.

Return to tip 2A and pipe a small circle on top of the elephant’s body (this is the elephant’s head).

With Wilton tip #402 add one ear to the side of the head.

Pipe a long nose from the head down with Wilton tip #11.

Add a tail to the back of the body with Wilton tip #2.

Using white icing and Wilton tip #3 add a small dot to the side of the head for an eyeball.

Using brown icing and Wilton Tip #2 place a small dot inside the white dot to complete the eye.

Gorilla:
Make 1/4 cup black icing

Using Wilton Tip 1A pipe a 2″ diameter circle. Run a lollipop stick through it into the cake (this is the gorilla’s body). Leave 1″ of the stick poking up from from the “body”.

Using Wilton tip 2A pipe a small circle on top of the “body” and add legs and arms to the “body”.

Using Wilton Tip 233 pipe “hair” all over the arms, legs body and head of the gorilla by gently pressing into the “body parts” and pulling out to desired length of “hair”.

Using Wilton tip 3 pipe fingers and toes and a small circle for the face. Add two small dots for the nostrils.

Using Wilton Tip #3 and white icing, add “eyes”.
Pipe Tip #2 dark brown eyes into white dots.

Using Tip #4 pipe a yellow banana into the gorilla’s hand.

Lions:
Mix 1/2 cup yellow icing.

Using Wilton tip #2A, pipe a long body. Add four legs. Poke a lollipop stick into the front of the body, projecting out about 1″ and pipe a circle over stick for the head.

Using Wilton tip 1A pipe a small circle for the nose.

Using tip #8 add a tail.

With Light Brown icing and tip #233 add a mane around the head and “hair” to the tail’s tip.

With Wilton tip #1, add a line on each leg for “paws”, add a nose and mouth.

Using Wilton Tip #3 and white icing, add “eyes”.
Pipe Tip #2 dark brown eyes into white dots.

Palm Trees:
Make 1/4″ green icing.

Using Wilton Tip #70 add leaves to one end of a pretzel stick. Poke into cake behind gorilla. (Repeat process until you have 3 trees).

Water:
1 cup blue icing gel.
grey icing.

Using tip 21 pipe small “rocks” as a border on 14″ circle, leaving an opening for a “waterfall”.

Starting inside the horseshoe, pour the full 1 cup of blue icing gel into the opening. With a spatula, spread gel out on visible part of 14″ circle and between the “rock” border so it runs down the front of the 14″ layer.

Flowers:
Yellow icing
1/8 cup red icing

With Wilton tip #107 make drop flowers on cake, where desired. Add flower centers in an alternating color using tip #3.

Enhance with Wilton Tip #66 leaves and Wilton Tip #233 for long grass as a border.

Let cake sit for a few hours so gel sets and then add personalized message.

*Butter Cream Icing

1 cup Crisco
1 Cup Butter
1 pound powdered sugar
2 tsp. milk
1 tsp. vanilla

Cream Crisco and Butter until smooth, add powdered sugar and beat until smooth and creamy. Add milk and vanilla and mix until smooth.
