These cupcakes are simple to make but do take a bit of time. I simply used a boxed white cake mix and made up the batter using the ingredients specified on the box. Then I divided the batter evenly into 6 separate bowls. In each bowl I created a different color using decorators food coloring gel (you can use food coloring but the colors won’t be as vibrant, more of a pastel rainbow).

Place cupcake liners in your muffin tin and layer one spoonful of each color into the liners. They do not need to be perfect and each cupcake will be unique in its’ design! Once the cupcakes have cooled, remove them from the pan and place on a tray for decorating.

Using a white frosting and a piping bag with a star tip slowly pipe the frosting onto the cupcake, starting in the center and working your way outward. If you want to make the frosting piled high then go back in toward the center and keep piping!

Finish off your little masterpieces with rainbow colored non-pareils. These are so fun and sure to elicit happy surprised gasps from children as they bite into they rainbow creation!

Colorful cupcakes

What a cool surprise the kids get when they bite into these.

They could so easily be turned into fairy or magic cupcakes too!
