Use a white or vanilla cake mix and follow instructions until the batter is complete.
Split the batter into 5-6 different bowls. In each bowl, squeeze 3-4 drops (or more if necessary) of food coloring.
You should have one bowl red, one bowl of orange, one bowl of yellow, one bowl of green, one of blue and one bowl of purple. (The orange is optional since I have noticed it tends to run together with the red and yellow.)
After mixing the colors in, spoon one small spoonful of purple into each cupcake liner, making sure it fully coats the bottom. Then follow by one spoonful of blue on top. Make sure you fully coat the purple with the blue. Make sure it is even so you will get a good line when the cupcake is done. Continue this process with all the colors in the order of the rainbow until you finish with a spoonful of red. When cupckaes are 2/3 full, pop them in the oven for 20 mins at 350 degrees.
For frosting, I combined one can of whipped vanilla frosting with one tub of whipped cream to get a very light and fluffy frosting. I used a zip-block bag to make “clouds” on top of the cooled cupcakes as the frosting. A rainbow mix of sugar sprinkles could be added to the top if desired.
